Shrimp Cocktail

  • 2 lbs. of fresh, large shrimp (black tiger prawns if available), peeled and deveined
  • ½ cup mayonnaise
  • ½ cup ketchup
  • 1 Tbsp. red wine vinegar
  • 2 tsp. grated red onion
  • 1 tsp. Colman's dry mustard
  • 2 Tbsp. thinly sliced chives
  • Salt and pepper to taste
  • Lemon wedges for garnish


  1. Bring a large pot of water to boil. Add a pinch of salt to the water.

  2. Add shrimp to water and cook for 2-3 minutes or until the shrimp have cooked through.

  3. Remove the shrimp and place in a large bowl of ice and water to stop the cooking process and retain the beautiful color.

  4. Combine all of the remaining ingredients in a small bowl and whisk.

  5. Taste and adjust the seasoning. If the dressing is too thin, add more mayo. If it is too thick, add more vinegar or ketchup.

  6. Place the shrimp and the dipping sauce on a platter and garnish with lemon wedges.

  7. The dressing will keep refrigerated as long as mayonnaise. Enjoy!
