Lobster Roll

Ever since I was a kid I have loved a good lobster roll. If you are not familiar, a lobster roll is basically lobster salad served in a hot dog bun, but it is certainly not basic! There are two types…one is served hot and the other cold. I’m definitely on Team Cold, but wouldn’t turn either away! Since we moved to North Carolina, I look forward to summers on Long Island where I can get a damn good lobster roll. A few weeks back I visited my friends at The Lobster Roll Restaurant, affectionately know as “Lunch” in Amagansett, NY. I think they make one of the best rolls on the East End and I couldn’t wait to learn their secret recipe. Andrea and Paul, the owners for nearly four decades, were so kind to welcome me into their kitchen and allow Simon, who has been with them for six years, to teach me a thing or two about lobster rolls.

  • 6 ounces fresh lobster meat (preferably knuckles)
  • 1 tablespoon good quality mayo
  • 2 tablespoons celery, chopped
  • 1 hot dog bun
  • 1 tablespoon butter
  • salt and pepper


  1. Chop the lobster into chunks and mix with mayo and celery

  2. Season with salt and pepper to taste

  3. Butter only the outside of the bun and toast in a pan over medium heat until golden brown

  4. Fill bun generously with lobster mixture and serve with coleslaw
