- 2 racks of lamb, cut into single chops

- 2 tablespoons dry oregano

Christie’s newest beauty! I love drinking prosecco in the summertime. An ice cold glass of prosecco can help you beat the heat in the afternoon or at an evening cocktail party! Prosecco is so light and refreshing. I recently spent the afternoon with my friend Christie Brinkley at her house in Bridgehampton mixing cocktails with her brand new line of prosecco she’s named, Bellissima. Her passion for this project has kept her involved every step of the way from the vineyard in Italy to the beautiful design of the Bellissima bottle. Together we made a Negroni Spagliato, an Aperol spritz. Bellissima offers three varieties of prosecco; a Brut DOC, a sparkling rosé, and a zero-sugar option! The Bellissima zero-sugar is an amazing choice especially if you want to mix it into a cocktail like an Aperol spritz or the Negroni Spagliato (both recipes are below). Bellissima is made with organic grapes grown in the Veneto region of Italy. The zero-sugar variety is also zero-carb for those watching their waistlines!
I have always been a fan of lamb chops! I consider them to be more of a “treat” than a big steak or even a lobster. For nearly 20 years, I have had the pleasure of eating my friend Helena’s lamb chops. They are the BEST I have ever had…even better than many I’ve tried at great restaurants. I am so excited to bring you Helena’s famous lamb chops today. We spent the afternoon cooking together this summer and she showed me how easy it is to make her delicious chops. I am ecstatic to now have her “secret” recipe and to be able to share it with all of you. What I learned is that her secret is not really a secret at all. Simplicity and top quality meat are what she credits to making them so delicious…a little butter, oregano, lemon pepper, salt and pepper go a long way too! Other than that, if you cook them like we show in the video, you’re going to have a lunch or dinner that you and your friends and family will love.

Wash and thoroughly dry the lamb chops. Evenly sprinkle the lemon pepper and the dry oregano on both sides of each lamb chop. Heat a heavy pan on medium-high heat. Once hot, place all of the lamb chops fat side down. Let the fat soften and render down. Once there is a crust on the fat side of the lamb chops, add the olive oil. Reduce to medium-low heat. Rotate the chops on one side and cook for two minutes, then turn them on the other side and cook for another two minutes. Add the butter to the pan and continue to cook the lamb chops. Add the lemon juice. Cook for one more minute. Serve on a platter and drizzle the remaining sauce from the pan on top of the lamb chops. Enjoy!
