My daughter loves Chicken Fingers and French Fries! I don't know about you, but going out to dinner on a weeknight is just too much of a hassle. That is why I created this amazing homemade Chicken Fingers and French Fries recipe that we can enjoy from the comfort of our own home!

Ingredients

  • 3 boneless, skinless organic chicken breasts
  • 3 eggs
  • 2 cups of plain breadcrumbs
  • Freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 2 medium Russet potatoes (french fries)
  • 2 Tbsp. of olive oil (french fries)

Preparations

  1. First, let the chicken come to room temperature. This takes about an hour.

  2. Once the chicken is at room temperature, preheat the oven to 425 degrees.

  3. Next, cut the chicken breasts into strips.

  4. Whisk the eggs in a bowl.

  5. Place the breadcrumbs in a separate bowl.

  6. Mix the Parmesan cheese and salt and pepper with the breadcrumbs.

  7. Place the chicken strips into the bowl with the eggs.

  8. Pour the breadcrumb mix into the bowl with the chicken strips and eggs.

  9. Be sure to coat the chicken strips evenly with the breadcrumbs.

  10. Place the chicken strips onto a baking sheet with a wire rack.

  11. Spray the wire rack with non-stick spray.

  12. Cook the chicken strips for roughly 25-30 minutes, or until golden brown.

  13. For the french fries, slice the potatoes into sticks and squares with the skin on.

    1. Place the potatoes onto a baking sheet lined with parchment paper.
    2. Drizzle the potatoes with olive oil and sprinkle with salt and pepper.
    3. Place into a 425 degrees oven for roughly 30-35 minutes or until crispy and golden.
