Caprese Salad

Everybody loves a good Caprese Salad! Take a look at my spin on this classic recipe that is sure to impress your friends and family.


  • 1 lb. of cherry tomatoes
  • 2 ripe avocados
  • 3 cups of frozen corn
  • 2 lbs. of fresh Mozzarella cheese (large balls in water)
  • 1 tsp. olive oil
  • 1 ½ cups fresh basil (Basil Dressing)
  • 1 cup olive oil (Basil Dressing)
  • Juice of 2 limes (Basil Dressing)
  • Salt and pepper to taste (Basil Dressing)


  1. In a non-stick pan, sauté the corn in the olive oil on medium heat. Cook the corn until it is warm a slightly charred.

  2. Slice the cherry tomatoes in half and place them into a large mixing bowl.

  3. Roughly chop the mozzarella and the avocado into small pieces.

  4. Combine the roasted corn into the mixing bowl.

  5. For the Basil Dressing, combine all ingredients into a blender.

    1. Blend until very smooth with no chunks of basil.
    2. If the dressing is not blending, add additional olive oil.

  6. Combine the Basil Dressing and the ingredients in the bowl.

  7. Gently mix with 2 serving spoons.

  8. Enjoy!
