Christie’s newest beauty! I love drinking prosecco in the summertime. An ice cold glass of prosecco can help you beat the heat in the afternoon or at an evening cocktail party! Prosecco is so light and refreshing. I recently spent the afternoon with my friend Christie Brinkley at her house in Bridgehampton mixing cocktails with her brand new line of prosecco she’s named, Bellissima. Her passion for this project has kept her involved every step of the way from the vineyard in Italy to the beautiful design of the Bellissima bottle. Together we made a Negroni Spagliato, an Aperol spritz. Bellissima offers three varieties of prosecco; a Brut DOC, a sparkling rosé, and a zero-sugar option! The Bellissima zero-sugar is an amazing choice especially if you want to mix it into a cocktail like an Aperol spritz or the Negroni Spagliato (both recipes are below). Bellissima is made with organic grapes grown in the Veneto region of Italy. The zero-sugar variety is also zero-carb for those watching their waistlines!

One of my favorite things in NYC was the killer Bacon, Egg and Cheese sandwich from the bakery down the road. Once I moved to North Carolina I decided to remake this great sandwich. Let me tell you, I think it's better than the original in NYC.
1. First, in a 450 degrees oven, place the 2 strips of bacon on a baking sheet and rack and cook until crispy. This takes about 20 minutes. Or, if you prefer, you can cook the back in a frying pan on the stove.
Wait until the bacon is cooked to start the eggs.
Once the bacon is cooked, crack 2 eggs, over medium heat into a non-stick frying pan.
Season the eggs with salt and pepper.
When the eggs are almost cooked (the white of the egg is not runny), place the American cheese on top of the eggs.
Pour a ½ teaspoon of water into the frying pan and cover with a lid for 30 seconds or until the cheese has melted ever the eggs.
Then, remove the eggs and cheese from the heat.
Slice the bun or roll and place the egg and cheese on the bottom half of the bun.
Break the 2 slices of bacon into half pieces and layer them on top of the egg and cheese.
Slice a half of an avocado and place that on top of the bacon.
Assemble the top of the bun or roll.
