Bacon, Egg, Cheese and Avocado Sandwich

One of my favorite things in NYC was the killer Bacon, Egg and Cheese sandwich from the bakery down the road. Once I moved to North Carolina I decided to remake this great sandwich. Let me tell you, I think it's better than the original in NYC.


  • 2 slices of thick cut, smoked bacon
  • 2 fresh eggs
  • 2 slices of yellow American cheese
  • 1/2 avocado, slices
  • 1 fresh Brioche Bun or Kaiser Roll


  1. 1. First, in a 450 degrees oven, place the 2 strips of bacon on a baking sheet and rack and cook until crispy. This takes about 20 minutes. Or, if you prefer, you can cook the back in a frying pan on the stove.

  2. Wait until the bacon is cooked to start the eggs.

  3. Once the bacon is cooked, crack 2 eggs, over medium heat into a non-stick frying pan.

  4. Season the eggs with salt and pepper.

  5. When the eggs are almost cooked (the white of the egg is not runny), place the American cheese on top of the eggs.

  6. Pour a ½ teaspoon of water into the frying pan and cover with a lid for 30 seconds or until the cheese has melted ever the eggs.

  7. Then, remove the eggs and cheese from the heat.

  8. Slice the bun or roll and place the egg and cheese on the bottom half of the bun.

  9. Break the 2 slices of bacon into half pieces and layer them on top of the egg and cheese.

  10. Slice a half of an avocado and place that on top of the bacon.

  11. Assemble the top of the bun or roll.

  12. Enjoy!
